How long to cook chicken drumsticks in the air fryer

Drumsticks take about 22 minutes at 200 °C, turned twice so every side browns. Pick what you have and how big they are: the timer tells you when to turn them.

How to air fry chicken drumsticks in three steps

  1. Dry them, then toss them in a bowl

Pat the drumsticks dry with kitchen paper. Put them in a bowl with a teaspoon of oil per four drumsticks, salt and your seasoning, and toss until every side is coated. A drumstick is round, so a bowl does in ten seconds what rubbing each one by hand does badly.

  2. One layer, and turn them twice

Preheat to 200 °C (400 °F) and lay the drumsticks in one layer, not touching, thick ends towards the edge of the basket where the air is hottest. Start the timer. Each time it says turn, roll them a third of the way over with tongs, so all three sides get a turn facing the fan.

  3. Check next to the bone

Push a thermometer into the thickest part, close to the bone but not touching it. Drumsticks are safe at 74 °C (165 °F). They are at their best at 80 to 85 °C (175 to 185 °F), when the tendons have softened and the meat slides down the bone. Rest them for a few minutes before serving.

Air fryer chicken drumstick times and temperatures

For drumsticks in one layer in a basket air fryer of 4 to 6 litres, preheated. A medium drumstick is about 120 g; a leg quarter, the whole leg with thigh and drumstick in one, about 300 g. A British “chicken leg” is usually the leg quarter, an American one usually the drumstick.

  1. Not yet Glossy and translucent at the bone, the juice running pink. Back in.
  2. Safe 74 °C. Cooked through, but the meat still clings to the bone and the tendons are firm.
  3. Tender 82 to 85 °C. The tendons have softened and the meat pulls away from the bone.

The times are a guide and the thermometer is the answer: drumsticks are safe at 74 °C (165 °F), measured next to the bone without touching it. Most cooks take them further, to 80 to 85 °C, because a drumstick has more tendon than any other part of the chicken and those only soften above the safe figure. The timer aims for that.

Do not judge a drumstick by its colour. Meat next to the bone of a young chicken can stay pink, and the bone itself can turn dark, even when it is fully cooked. The USDA calls the dark bone an aesthetic issue, not a safety one, and the thermometer is the only test that counts.

Food safety

What the official guidance says

Chicken drumsticks

Poultry is safe at 74 °C (165 °F), measured with a food thermometer.

Pink meat and dark bones

Safely cooked poultry can be white, pink or tan. Dark bones and dark meat around them happen in young chickens and are not a safety issue. All of it is safe once every part has reached 74 °C.

Don’t overfill the basket

Crowding stops the air circulating and can leave chicken undercooked. Cook a large amount in batches.

Leftovers

Why drumsticks get two turns

A breast or a thigh is flat: it has a top and a bottom, and one turn halfway evens them out. A drumstick is round. Whatever side lies on the basket stays pale and soft while the side facing the fan browns, so one turn leaves a pale stripe along each one.

Rolling them a third of the way over, twice, gives each side its turn under the heat. It is also what renders the fat evenly out of the skin, which is the difference between skin that crackles and skin that slides off.

Tendons, and the higher number

The drumstick is the hardest-working muscle on a chicken, and it is full of tendons: the thin white cords that run down to the knuckle. At 74 °C they are cooked and safe, but still tough enough to chew around. Somewhere above 80 °C the collagen in them melts.

That is why drumsticks are hard to overcook. A breast is ruined five degrees past done; a drumstick is better ten degrees past it. If one is still clinging to the bone, give it three more minutes.

Drumsticks, legs and leg quarters

The words change at the border. In the United States a “chicken leg” usually means the drumstick, and the whole leg is sold as a leg quarter. In Britain, Ireland and Australia a chicken leg is the whole leg, thigh and drumstick in one piece, and the drumstick is sold separately as a drumstick.

A leg quarter is closer to a thigh than to a drumstick: flat on one side, with a skin side. Cook it skin side down first at 190 °C, then turn it skin side up, about 30 minutes in all. The chicken thighs timer uses the same method for the same reason.

Questions about chicken drumsticks in the air fryer

How long do you cook chicken drumsticks in the air fryer?

20 to 24 minutes at 200 °C (400 °F) for medium drumsticks of about 120 g, turned twice. Small ones take 16 to 20 minutes and large ones 24 to 28. Check that the meat next to the bone reads at least 74 °C (165 °F); 80 to 85 °C is better.

What temperature do you air fry drumsticks at?

200 °C (400 °F). Drumsticks have thick skin and plenty of fat under it, and the high heat renders it and crisps it in the time the meat needs. At 180 °C (350 °F) they take 25 to 30 minutes and come out softer. Glazed or marinated drumsticks do better at 190 °C, because sugar and yoghurt burn.

How long do chicken legs take in the air fryer?

It depends what the shop means by a leg. A drumstick takes 20 to 24 minutes at 200 °C (400 °F). A whole leg, thigh and drumstick together, which is what a chicken leg usually is in Britain and Australia, takes 28 to 32 minutes at 190 °C (375 °F), skin side down first and then skin side up.

How long do chicken leg quarters take in the air fryer?

28 to 32 minutes at 190 °C (375 °F) for a leg quarter of about 300 g: 15 minutes skin side down, then 15 skin side up. Check the thickest part of the thigh, near the joint. Leg quarters are big, so most baskets take two at a time.

Can you cook frozen drumsticks in the air fryer?

Yes, straight from the freezer. Cook them at 200 °C (400 °F) for 10 minutes, pull apart any that have frozen together and season them, then cook 10 more, turn, and give them a final 6 to 10. That is 26 to 30 minutes in all. Check every one with a thermometer; frozen drumsticks vary a lot in size.

How do you get crispy skin on air fryer drumsticks?

Dry them thoroughly, use only a little oil, cook at 200 °C, and turn them twice so no side sits against the basket for the whole cook. A teaspoon of baking powder mixed into the salt and seasoning per 500 g blisters the skin further. If they are cooked but not crisp, two more minutes at 200 °C will not hurt the meat.

What internal temperature should chicken drumsticks be?

At least 74 °C (165 °F) next to the bone, which is the USDA figure for all poultry. Drumsticks are better at 80 to 85 °C (175 to 185 °F), when the tendons have softened. According to the USDA, a pink tinge or a dark bone does not mean they are undercooked once that temperature is reached.

How many drumsticks fit in an air fryer?

As many as lie in one layer without touching: usually six to eight in a 4 to 6 litre basket, ten or more in a large one. Crowded drumsticks steam instead of crisping, and the USDA notes that an overfilled basket can leave chicken undercooked. Two batches are better than one pile.

When do you add BBQ sauce to drumsticks in the air fryer?

At the end. Sauce put on at the start burns long before the chicken is cooked. Cook the drumsticks plain for about 22 minutes, brush or toss them in the sauce when the timer says sauce, then put them back for 3 minutes at 200 °C so it sets into a sticky glaze.

How do you reheat drumsticks in the air fryer?

6 to 8 minutes at 180 °C (350 °F), turned once, until hot right through to the bone. The skin crisps up again, which it never does in a microwave. Only reheat drumsticks that went into the fridge within two hours of cooking.
